Great Canada fishing trip?

Looking to take my grandfather on a fishing trip of a lifetime. I figured Canada would be the best place. I looked at a lot of places but there are so many I don't even know where to start. A lot of the outfitters only offer row boats with motors and that would be too tough on him. He needs to be on a stable boat like a pontoon or a runabout. Any advice? Money is no object.
